Ingredients:
1 pound boneless, skinless chicken breasts
4 oz nitrate-free turkey bacon, diced
1 onion
4 oz mushrooms (I usually add some mushrooms, but no where near this amount)
2 cups (4 oz) sugar snap peas
3/4 teaspoon seal salt
1/4 teaspoon pepper
5 cups hot cooked brown rice
- Cut chicken into bite-sized pieces and set aside
- Sauté bacon for 8 minutes, remove from pan
- Sauté onion and mushrooms until tender
- Stir in chicken, and sauté until done.
- Add peas and cook until peas are done.
- Stir in salt and pepper and add bacon back in
- Combine with cooked rice
