Hot Fudge Sauce

Ingredients:

  • 1 cup Unsweetened Cocoa Powder
  • 1 cup Sugar
  • 1 cup Heavy Cream
  • 1 stick Salted Butter, Cut Into Pieces
  • 3 teaspoons Vanilla
In a medium saucepan, gently whisk together the cocoa powder and sugar. Whisk in the cream, then turn the heat to medium and whisk it as it warms up. When the mixture starts to heat up, add the butter and stir it in to melt. Then when the mixture is nice and hot, add the vanilla and stir it to combine. Let the sauce cool in the pan for 5 minutes, then transfer it to a mason jar. Store it in the fridge (it will become solid as it cools).

To serve, scoop out the amount you need and place it in a microwave-safe bowl. Heat it for 20 seconds, then stir and heat for another 10 or until the sauce is warm.

Parmesan Crusted Chicken Fingers and Tomato Basil Sauce

*I'm writing this up so I don't forget how I made this, but there are no measurements because I didn't measure. Good luck ;). This serves 2 people and is amazing.

Sauce:
olive oil
1 lb tomatoes
4 cloves of garlic, chopped
1/2 small onion, chopped
a few fresh basil leaves, separated
seasonings to taste - pepper, salt, sugar, oregano


Chicken fingers:
1 large Costco sized chicken breast, or two regular sized ones, cut against the grain into slices
Planko bread crumbs
Parmesan cheese
1/2 cup flour
1 egg, beaten
seasonings - salt, pepper, oregano, basil (fresh and/or dried), garlic powder, onion powder

Start water boiling for pasta.

Chop onion, garlic, and tomatoes. Heat oil in a pan and sauté onion and garlic for a couple of minutes. Add tomatoes and some seasonings (not too much salt until the end since the tomatoes will cook down some). Let it cook on low to medium heat while you do everything else.

Add pasta to boiling water and cook according to package.

Heat generous amount of olive oil in a pan. Mix bread crumbs with parmesan cheese (about half and half) with seasonings. Put flour in one bowl, bread crumb mix in one bowl, and beaten egg in another bowl. Coat chicken in flour, then egg, then bread crumbs and fry in oil. Flip when browned. Fry until it's cooked all the way through.

Season tomato sauce to taste. Top pasta with tomato sauce, fresh basil, and chicken.

Easy Caramel Sauce

So easy, so good

Homemade Caramel Sauce


3/4 cup butter
1 1/2 cups firmly packed brown sugar
2 tablespoons water
1/4 teaspoon salt
3/4 cup evaporated milk
1 tablespoon vanilla extract

Combine butter, brown sugar, water, and salt in a medium sauce pan, over medium heat, stirring constantly.  Bring to boil for 3 to 5 minutes depending upon thickness desired (I recommend 5 min from rapid boil).  Remove from heat and stir in evaporated milk and vanilla.

Teriyaki Sauce

Ingredients:


Directions:
  1. Combine 1 cup water, tamari, brown sugar, garlic and ginger in a saucepan and bring to a boil, stirring constantly.
  2. Dissolve cornstarch in 1/4 cup of cold water and add to sauce.
  3. Stir constantly to allow the sauce to thicken.
  4. If the sauce is too thick add a little water or tamari to thin.

Note: This is not a sweet sauce, so if you want a sweeter one, add a few more TBS sugar or honey

Spaghetti Sauce - Judy Melvin's

(This recipe is actually worth the work....it's delicious)
1 large can tomatoes (Kristin prefers the petit chopped)
1 can tomato sauce
1 can (6 oz) tomato paste and 1 can water
1 jar Ragu (or your preferred prepared sauce)
1 pound fresh ground round
1 carrot, finely chopped
1 med sweet onion, chopped
1 cup chopped celery
1 red pepper, chopped
1 green pepper, chopped
2 cloves garlic
salt and pepper to taste
1/2 Tbs parsley flakes
1 tsp Basil
1 Tbs Oregano

Place tomatoes, sauces, paste, jar or Ragu, water in large sauce pan. Simmer on low with cover on. Stir occasionally.

In frying pan, brown hamburger with salt and pepper in olive oil. Add to sauce.

Place all the copped veggies (carrot, peppers, onion, celery, garlic) in frying pan with 1-2 Tbs olive oil. Cook slowing with cover on until translucent.

Add to sauce.

Add seasoning. Cover and low simmer for several hours.

Super delicious!!!


BBQ Sauce

I used to make this a lot and it is YUMMY.

1 cup ketchup
1/4 cup lemon juice
2 cups water
1.5 cups brown sugar
1/4 cup vinegar
2 sticks butter
3/4 cup (or more) Worcestershire sauce
1 Tbs salt
2 Tbs chili powder
2 Tbs paprika
pepper
garlic powder

Simmer together for at least 1/2 hour. Thicken with corn starch.


Chocolate Fudge Sauce

12 semi sweet chocolate (I've used chocolate chips)
2 sticks butter
2 2/3 cup whipping cream
3 1/2 cup powdered sugar
1 Tbs vanilla

In a medium sized saucepan, over medium-low heat, melt the butter and chocolate chips together. When melted, add heavy cream and powdered sugar. Stir and bring to a slow boil. Only turn the heat up to medium high, as anything higher will scorch the chocolate. Stir constantly until mixture comes to a boil. Allow to boil for 8 minutes. Remove from heat and add the vanilla. Stir thoroughly.

Please note: This is good enough to put in small jars and give out to friends and neighbors at Christmas time. VERY YUM!!!
